Groundnut oil, also known as peanut oil or arachis oil is a mild tasting vegetable oil derived from peanuts. The cold pressed oil retains the nutrients, aroma and the flavor. It is often used in South Indian, Chinese and Southeast Asian cuisine, both for general cooking, and in the case of roasted oil, for added flavor. Peanut oil is also an ideal choice for deep-frying because it can be heated to a higher temperature (smoke point -450°F). This results in lower oil retention in the fried foods. Wonderfully pleasant, sweet-flavored peanut oil is low in saturated fats, free from cholesterol, contains essential fatty acid ( linoleic acid (omega-6)) making it as one of the healthiest cooking oils. It have the healthy proportion of fatty acids, and Its major component fatty acids are oleic acid (46.8% as olein), linoleic acid (33.4% as linolein), and palmitic acid (10.0% as palmitin). Peanut oil contains resveratrol, a polyphenol antioxidant, which has been found to have protective function against cancers, heart disease, degenerative nerve disease, Alzheimer’s disease, and viral/fungal infections. |
